Febuary 7, 2006. "Spring, Summer, Winter or Fall? All you've got to do is call" this weather strange for this time of year. It feels so good to drink in the sun and replenish the dwindling vitamin D in the body… the vitamin D that was supposed to keep dwindling till Spring. I'm afraid I've misplaced my sunscreen.

Please remember to check Rotary assignments for the regular meetings so as not to forget your scheduled tasks for next meeting. Tasks consist of Set-up, Break down, Invocation or Finemaster.

Tuesday, Noon, Feb. 14th
The Valentines lunch should be a real winner as we combine with Calistoga Rotary at the CIA. The cuisine will be prepared by the students under the scrupulous supervision of some of the world's best chef instruction engineers. Be there and bring a valentine if you have one. Should score you some big points!

September 16th & 17th
Relay for life. Doug Ernst announced this year's Relay for Life event well in advance for all you far-out planners. Stand by for more details in future issues of the Nairator.

Sunday, February 19th
Museum For A Day. John Sales announced this event, noting the many items owned by locals and donated for the day. Come and see. 11 am - 4 pm. $10.

Saturday, April 1st (No Fooling)
John Sales
announced the District Assembly to be held at College of the Redwoods in Fortuna. All Rotary officers are expected to go and all new Rotarians are encouraged to go as it will greatly enlighten your grasp of all Rotary has to offer.

Under the direction of co-chairs Polly Keegan and Kelly Crane , Rotary Ball promises to be all it was last year and more. So in order to see how much fun we had last year Kelly showed video clips of the four corners of the event from the band to the auction-action to the gambling tables. Yes, "Come to Morocco".

Total net raised at last year's event was $368,000. Gross $450,000. Gross with matching contributions $550,000.

Some donated items for this year's event worth mentioning:

  • Beckstoffer ½ ton of grapes
  • Extreme makeover including laser facial, clothing On the Vine, teeth whitening, massages by Beverly Davies Mes
  • $2,000 clothing package from Mario's
  • 5 golf lessons donated by Jeff Epps (not given by Jeff in case you were wondering)
  • Giants game tickets and memorabilia

Silverado Brewing Company will cater the event and will feature Nieman Ranch rack of lamb

Dave Moreland will have the table with all the fruits and nuts.

Look for a Vodka bar, cheese plates, and lots of entertainment. There will be no gambling tables this year and unfortunately no camel rides. Clean up and moving of equipment will take place on Sunday because the trucks are going back to San Francisco that day.

Valentine's Day at CIA

February 14, 2006. St. Helena and Calistoga Rotary Club Presidents Bill Word and Kevin Eisenberg introduced themselves as Starsky and Hutch before introducing St. Helena Rotarian Phil Toohey, who recited the invocation at the joint Valentine's Day luncheon for the two clubs at the Culinary Institute of America at Greystone.

Paul Harris Award:  In a tribute to Calistoga Rotarian Jennifer Biskin, who is leaving Calistoga for San Jose, Phil Toohey presented her with a Paul Harris Foundation award. "She raced to complete her Paul Harris so she could leave in permanent good standing," said Kevin Eisenberg.

Cooking Demonstration: CIA director Charles Henning, a member of the Calistoga Rotary Club, welcomed members of the two clubs, and their sweethearts.

Chef-instructor Bill Briwa, who has spent the past eight years teaching culinary arts, who worked with Thomas Keller and who currently works with the Wine Spectator Restaurant, recalled St. Helena's "golden era" when he owned Palmer's and everyone in town seemed to visit restaurants every night. He then proceeded to demonstrate how to cook a marvelous Mexican dish, Chilaquiles. Here is the recipe, courtesy of Bill Briwa and Cate Coniff, public relations director for the CIA:

Chilaquiles with Mushrooms, Chard, Sweet Potatoes
and Aged Cheese

Makes 6 servings

Ingredients
10 medium Roma tomatoes
1 white onion, sliced into 1/6ths
5 garlic cloves, unpeeled
4 canned Chipotle chiles
3 cups vegetable stock
1 sweet potato, cooked and cut into ¾" pieces (peeled?)
½ teaspoon salt
1 tablespoon vegetable oil
2 cups mushrooms  (a variety, as available), sautéed 4 cups chard leaves, cut into 1" ribbons
8 ounces tthick, no-salt tortilla chips
¼ cup onion slices, rinsed
½ cup Queso añejo, crumbled
12 fresh cilantro or epazote leaves
1/3 cup sour cream

Method
Turn boiler on to high

1. Place the tomatoes on a sheet pan and roast under the broiler until soft and beginning to blacken on the first side – about 5 minutes.  Turn the tomatoes and continue to broil until the second side is darkening and the flesh is very soft.  Peel away the worst of the blackened skin and remove the core from each tomato.  Reserve the meat of the tomato plus any juices that have accumulated.

2. Roast the onions and cloves of garlic in a dry pan over medium-low heat.  Turn the vegetables periodically until the onions and garlic are both soft and browned.  Remove the papery husk from the garlic and the hard stem end from each garlic clove.  If the skin is still on the onion, remove it and discard.

3. In a blender combine the tomatoes and their juice along with the onions, garlic and chipotles and blend into a smooth, but textured purée. 

4. In a large dutch oven with a lid, heat the oil until it begins to smoke.  Add the purée from step 3 all at once and sear until it reduces to the consistency of tomato paste.  Stir this mixture constantly over high heat to prevent scorching – about 3 to 5 minutes. Thin this mixture with the vegetable stock (to what consistency) and season assertively with salt.

5. Bring the mixture from step 3 to a boil and add the chips, chard, mushrooms and sweet potato.  Return to a simmer, stir well until all the chips are well coated, and remove from the heat cover and wait 4 minutes.  Check the chips to see that they have softened and have achieved the requisite chewy softness.  If they are still crunchy, re-cover and allow to sit another minute.  If the chips are hard and yet the broth has all been absorbed you can add additional broth.

6. To serve, spoon them onto warm and sprinkle with sliced onions, crumbled cheese, and a drizzle of sour cream thinned with milk to a pourable consistency.  Top with cilantro or epazote leaves.

Absent: Armstead, Toohey, Patterson, Rada, Scheideman, and Crane.

Treasurer's Report: Norm reports all is well. No major unpaid bills or delinquencies.

Attendance Report: Carol reports about 10 members under 30%. January attendance 68%.

Funding Requests and Grants:

  • Stonebridge Apartments Playground Equipment: 501(3)(c) organization; 200 plus kids of low-income families. They need $25,000 for playground equipment for kids over 8. $2,500 approved now, plus another $2,500 as and if additional funds become available.
  • St. Helena Food Pantry Milk Program. $1,500 approved.

Membership Report: Loren Gardner and Vince Van Dyke resignation requests regretfully approved; Jim Wright reclassified to Senior Active; Lisa Marie Anderson granted LOA to 4/1/06; Rex Stults granted change in classification to Trade Association.

Avenues of Service Reports:

  • Club Service, Steve. Much interest in a baseball day. Steve is working on tickets. Nairator and PR going well.
  • Community Service, Jim. Discussion of possible support to an upcoming choral festival/competition. More to come.
  • Youth Service, Roger. Club seeks students for scholarships. $8,000/year budgeted. RYLA program needs two students for the June encampment. $500 per student approved.
  • Membership, Chuck. Red Badge program for first year of membership up and running. Orientation for both new members and sponsors.
  • Foundation, Elaine. Club has averaged $139 per member for RI Foundation, thus meeting the year's goals. 
  • Winter Ball, Polly. Looks like another great year for the Ball. The event is a sellout and all elements are nicely in place. Official congratulations to Polly and Kelly , Co-chairs, for jobs well done!

Adjournment. The President's gavel fell at 1:33 p.m. sharp.

 

Rotary Membership Moments

Week 34 – February 19-25, 2006  Have a classification hunt.  List all the classifications of the members that you have in your club today.  Look in the phone book and list those classifications that you don't have.  Form teams and make it a contest to see who can invite those classifications that are lacking to your next club meeting. Diversification of your club will make it a richer club.

Go on a Treasure hunt for those new members

Week 35 – February 26 – March 4, 2006  The rule of "85" gives a break to the older Rotarian.  The rule is this; take your age and add the number of years you have been in Rotary, 65 years of age and been in Rotary 20 years = 85.  What does this mean?  It means that you can be counted as a club member but for attendance purposes you are not counted.  You must petition the club board and request this status change.  This helps if you want to travel or not feeling up to par on a particular meeting day.   It is completely on a voluntary basis.
